APPLE, GINGER & GIN CAKE
Nothing beats the heavenly smell of Apples and Cinnamon baking in an Apple, Ginger & Gin Cake on a cold winter’s day – or ever really.
The ginger, to keep us healthy. And apparently ginger in a cake gets better the longer you leave it, unfortunately in my house that’s not very long at all!
Then we have the obligatory addition of gin… nuff said there!
Top Tip: I don’t peel my apples. Nobody’s got time for that. I just can’t be bothered to spend time removing a perfectly good, edible, nutritious peel. But you can go ahead and peel them if you like.
INGREDIENTS:
- 150g unsalted butter
- 150g brown sugar
- 150g golden syrup
- 200ml milk
- 250g flour
- 1 tsp ground cinnamon
- 1 tsp ground ginger
- 1 tsp baking powder
- 2 free-range eggs
- 1 Tbsp chopped or grated ginger
- 2 apples – chopped into chunks
- 150g ginger jam
- 25-50ml Gin
METHOD:
- Preheat the oven to 180°C/fan160°C. Grease and line a loaf tin.
- Melt the butter, sugar and golden syrup in a saucepan. Once melted, stir through the milk and set aside.
- Mix your flour with the spices and baking powder and make a well in the centre. Pour in the cooled mixture slowly, mixing with a wooden spoon.
- Fold through eggs, chopped apples and ginger.
- Pour the mixture into the loaf tin
- Bake in the oven for one hour or until a skewer comes out clean.
- Mix ginger jam and gin together, then spoon over the top of the warm cake.
In our house, we have no problem eating the whole thing. As in, my husband and I, and one entire cake. A slice here, and a little slice there, and a couple more slices after dinner, and suddenly it’s time to make another cake.
A spiced G&T’ or another warm drink, a soft sweater and a slice of cake! This Apple, Ginger & Gin combo will brighten up the most miserable of winter days!
