GIN SPIKED BANANA BREAD
You've tried your hand at baking banana bread before I’m sure, but have you tried adding your favourite tipple to the batter? May I present, baked banana bread laced with toffee gin!
Making this Gin Spiked Banana Bread gives an extra kick to a much-loved recipe and is sure to bring welcome cheer.
Gin Spiked Banana Bread
INGREDIENTS:
• 100g butter, softened
• 175g light brown sugar
• 4 ripe bananas, mashed
• 2 eggs
• 2 tbsp toffee gin
• 1 tbsp vanilla
• 1 tsp cinnamon
• 1/2 tsp nutmeg
• 1/8 tsp cloves
• 1 tsp baking soda
• 1 tsp salt
• 200g plain flour
• 150g toffee pieces, optional
METHOD:
1. Preheat the oven to 180°c and line a large loaf tin. Beat together the butter and sugar until light and fluffy, then stir in the bananas until well mixed.
2. Fold in the eggs one at a time, then mix in the toffee gin, vanilla and spices. Measure the flour, baking soda and salt into a separate bowl, then sift into the batter.
3. Mix in the toffee pieces until just combined, then pour into the loaf tin. Bake for around an hour, until the top is golden and springy to the touch, and a skewer comes out clean.
4. Leave to cool on a rack, then slice and serve.
We love banana bread at our house. Even though it is quick and easy to make, sometimes you just don’t have it in you. It’s for moments like this that I make an extra loaf or two and pop it in the freezer waiting for one of those lazy mornings to heat it up and smear it with butter. Paired that with an awesome cup of coffee, your day is off to a great start. Best enjoyed thickly sliced, a little warm and slathered in good quality butter.
