Oh goodness… it’s a childlike treat that’s strictly for grown-ups! Just add a lovely big scoop of vanilla ice cream or the Zesty G&T Ice-Cream that you might have made and still have left in the freezer, and suddenly you have a decadent G&T float.
Use a tall thin glass because once the creamy ice cream hits the sparkling tonic water it foams up beautifully before settling back into the drink.
I just use any gin I have on hand, but experiment with flavoured gin for a twist. I find that using aromatic tonic water does make a difference.
If serving this as a dessert, add the ice cream to the G&T immediately before serving so it’s still all frothy, sweet and creamy when you present it.
